Description
Production area
Obtained from 100% Cabernet Franc grapes, a vine of Bordeaux origins introduced into Collio at the end of the 1800s. It has very vigorous vegetation and immediately demonstrated great resistence to rain and to the intemperate weather of spring and autumn.
Vineyards
Type: Red
Grapes: Cabernet
Harvest: The grapes are harvested later than normal
Maturation
The grapes are harvested later than usual and are then macerated for about twenty days until the sugars are eliminated. Pressing is done manually to extract as best as possible, all the substances that the grapes have carefully retained. The wine thus obtained stays in this fashion until the end of bottling, that typically occurs in the summer or autumn the year following the harvest.
Sensory
Natural ruby red with a definite violet rim that shifts to garnet/brown with age. Typically intense herbal aromas that are very pleasing and reminiscent of the variety. Herbaceous in nature, displaying richness and harmony. Full and generous, distinct and austere.

It is recommended to be served at 16 – 20˚С

Antipasti (salumi or cold cuts), roasted white or red meat, chicken, game and aged cheeses.
